  1. As I’m from Scotland, I’m delighted to see that you’re keen on one of our national dishes. A lot of the stereotypical foods associated with Scotland aren’t great if you’re going to be going on a diet of any sort. I’m thinking particularly of deep-fried Mars bars! I’ve always liked making shortbread biscuits as they are so simple (1 part sugar, two parts butter or margarine and three parts plain flour) and only take 10-15 minutes to cook at 160C. Here’s a typical recipe: http://www.nigella.com/recipes/view/easy-shortbread-1283 They’re particularly nice with chocolate chips or raisins.

Another Scottish dessert that is probably slightly healthier than tablet is Clootie Dumpling, a sort of fruitcake that was traditionally cooked in an old towel: http://uktv.co.uk/food/recipe/aid/592682
